Miniature Apple Pies

Today at work we had a food day for St. Patrick's Day. I was in charge of bringing dessert as always. I love being the dessert girl. It's my favorite part of every meal! So, I wanted to make something green... I came across a cute little recipe on Pinterest for miniature apple pies. Perfect!
Here's how it's done...
15 Granny Smith apples... washed.

Cut the tops off...
Remove all of the "insides"...(I used a tablespoon to scoop it all out). Once you get it all out, toss extra pieces with 1 cup of sugar and 1 tablespoon of cinnamon (I thought there was too much cinnamon, next time I would do a little less)...
Place coated pieces of apple in the empty apples....

Create a lattice of pie dough on the top. I used store bought pie dough. It saved A LOT of time! I cut it into strips with a pizza cutter. Once the lattice is on the apple, brush melted butter on the dough.
Cover with foil and place in 375* oven for 30 minutes. Then remove the foil and continue to cook for 15-20 minutes. The recipe I used said to add water to the bottom of the dish (you can see it in the picture) but I'm not sure I would do that again. The bottoms ended up blowing out of the apples and it seemed more like apple sauce then a pie.

I definitely wasn't as impressed as I hoped I would be. They were yummy, don't get me wrong. But they could have been better. I will say, they go great with vanilla bean ice cream!!!
